These Carrot Cake Bars are a delightful treat featuring fresh carrots and warm spices. Simple to make and topped with creamy frosting, they are ideal for a quick dessert or a comforting snack.

- ¾ cup avocado oil
- ½ cup granulated sugar
- ¾ cup light brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 1.25 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 cup shredded carrots, ~2 medium carrots
- 16 oz. cream cheese frosting
Instructions
- Preheat your oven to 350℉ and grease a 9×9-inch cake pan. Set it aside.
- In a large bowl, mix together the avocado oil, granulated sugar, and brown sugar. Stir in the vanilla extract and eggs until well combined and set aside.
- In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, mixing until combined. Then, fold in the shredded carrots.
- Pour the batter into the prepared cake pan, and bake for 30-40 minutes or until a toothpick inserted comes out clean. Allow the cake to cool completely for about 2-3 hours before frosting.
- Spread the cream cheese frosting over the cooled cake and slice into 12 bars.
Notes
For best results, let the bars cool completely before adding frosting to prevent melting.
Feel free to add nuts or raisins for extra texture and flavor.
Store leftovers in an airtight container in the fridge for up to five days.
