Description

BBQ Shrimp Bowls boast an irresistible blend of flavors with tender shrimp, fresh veggies, and savory BBQ sauce. Ideal for a quick weeknight dinner or a healthy, satisfying meal any day of the week!


Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp parsley
  • ½ tsp salt
  • ¼ tsp thyme
  • ¼ tsp oregano
  • ¼ tsp cayenne, optional
  • ½ cup bbq sauce, divided
  • 2 mini cucumbers, sliced
  • 1 cup shredded carrots
  • 1 avocado, sliced or diced
  • 2 cups white rice, cooked or sub brown rice or quinoa

Instructions

  1. Cook the rice according to the package instructions if not done already.
  2. In a large bowl, mix shrimp with paprika, garlic powder, onion powder, parsley, salt, thyme, oregano, and optional cayenne.
  3. Heat olive oil over medium in a skillet, add shrimp, and cook until pink, about 4 minutes. Remove from heat and stir in BBQ sauce.
  4. Divide cooked rice between two bowls, topping each with half the shrimp, cucumbers, carrots, and avocado.
  5. Drizzle with additional BBQ sauce and serve.

Notes

Feel free to adjust the spice level by adding more or less cayenne powder.
You can substitute white rice with brown rice or quinoa for a healthier option.
