  • 8 chicken thighs (bone-in, skin-on)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 ½ teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  • Preheat the oven to 425°F (220°C). Allow the chicken thighs to come to room temperature and pat dry with a paper towel.
  • In a small bowl, mix garlic powder, onion powder, paprika, oregano, thyme, kosher salt, and black pepper to create the seasoning blend.
  • In a large mixing bowl, combine the chicken thighs with olive oil and about two-thirds of the spice blend. Ensure all sides are well-coated.
  • Place the seasoned chicken on a rack set over a baking sheet, and sprinkle the remaining seasoning mix on top of the chicken thighs.
  • Bake for 35 to 40 minutes, or until the internal temperature reaches 170°F. For extra crispiness, broil for 2 to 3 minutes at the end of cooking. Rest for 5 minutes before serving.
