Ingredients
Scale
- 8 chicken thighs (bone-in, skin-on)
- 2 tablespoons extra virgin olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 ½ teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 425°F (220°C). Allow the chicken thighs to come to room temperature and pat dry with a paper towel.
- In a small bowl, mix garlic powder, onion powder, paprika, oregano, thyme, kosher salt, and black pepper to create the seasoning blend.
- In a large mixing bowl, combine the chicken thighs with olive oil and about two-thirds of the spice blend. Ensure all sides are well-coated.
- Place the seasoned chicken on a rack set over a baking sheet, and sprinkle the remaining seasoning mix on top of the chicken thighs.
- Bake for 35 to 40 minutes, or until the internal temperature reaches 170°F. For extra crispiness, broil for 2 to 3 minutes at the end of cooking. Rest for 5 minutes before serving.
Notes
For best results, ensure chicken thighs are patted dry to achieve maximum crispiness.
