Ingredients

  • 1 pound ground chicken
  • 1 egg
  • ½ cup breadcrumbs
  • ¼ cup shredded onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • zest of 1 lemon
  • ¼ cup grated parmesan

Instructions

  1. Preheat the oven to 425 degrees F.

  4. Line a baking sheet with parchment paper.
  5. Scoop about a tablespoon-sized portion of the mixture, roll it into a ball, and place it on the baking sheet. You should make around 30 meatballs depending on the size.
  6. Bake the meatballs for 20-25 minutes until they are slightly golden and thoroughly cooked.
  7. Serve with your favorite dipping sauce, over pasta, rice, or alongside vegetables.

Notes

For a lighter option, substitute ground turkey for ground chicken.
